CILANTRO - MINT CHUTNEY
Makes about 2 1/2 cups
Ingredients
2 bunches fresh mint, heavy stems removed
2 bunches fresh cilantro, roots trimmed
2 cups plain yogurt
2 or 3 jalapeños or other green chiles, stemmed, coarsely chopped
1 medium red onion or 1 or 2 large shallots (4 ounces), sliced
2-inch piece fresh ginger (1/2 ounce), peeled, chopped
1 tablespoon freshly squeezed lemon juice

How To Make It
1. Rinse the mint and cilantro well to get rid of any dirt. Thoroughly dry.
2. Combine the mint, cilantro, yogurt, chiles, onion, ginger, and lemon juice in a blender or food processor. Whizz to a smooth consistency. Taste and add salt as needed.
3. Transfer to a container, cover, and refrigerate. Serve cold.
